Given its "local" and non-industrial nature, one of the fundamental characteristics of a craft brewery is the very close correlation with the production area and its most typical products. Since at Birrificio San Quirico we chose to make an artisanal product made without pasteurization and filtration processes or the use of preservatives or chemical additives, we decided to focus on short chain ingredients of the highest quality.
What's your name? It's the first question even children ask one another when they meet. As for people, also for a product the name is what identifies it in front of others, it is the business card with which to introduce oneself. And choosing one is never easy!
There are many factors that contribute to give a craft beer its character and they are not only related to the ingredients, the recipes or the production method, but they are also connected to other, diverse aspects, such as the size of the company, a strong territorial characterization, constant experimentation and the use of the highest quality ingredients. The first big difference between craft beers and industrial beers is, of course, in the production process that in industrial beers includes two phases that do not apply to craft production: pasteurization and pre-bottling filtration.
Appreciating its scent, feeling the bubbles of its foam on the lips, admiring its reflections in the glass: enjoying a beer that we like is not only a pleasure for the palate, but also a moment of relaxation. And when you are relaxing the location plays a key role, of course.
